Sorrel is a spinach-like green with a lemony tang. Excellent raw in green salads (though you may wish to reduce the amount of vinegar or lemon in the dressing). Classic in French Sorrel soup or sorrel sauce for fish. Chop leaves into eggs and vegetables. Fold into sauces or mayonnaise
