This sauce is just barely warmed before tossing with hot pasta. The very fresh ingredients become fragrant and release lots of flavor.
3 Tbsp. olive oil
4 cloves garlic, minced
Pinch red pepper flakes
6 cups arugula, coarsely chopped
4 plum tomatoes, seeded and chopped
Salt
In a large skillet, heat oil over medium heat. Add garlic and pepper flakes. Cook 2 minutes, or until golden. Add arugula and cook until wilted. Add tomatoes and remove from heat. Season with salt. Make up pasta. Serve with Parmesan cheese if desired.
